This restaurant in the back alleys of Insa-dong, central Seoul, serves three varieties of sujebi, a hearty soup made with satisfyingly chewy flakes of dough. The variety served at Insadong Sujebi is chock full of oysters and comes in plain, perilla seed or spicy varieties all served in a stone pot. Go for the spicy one and order a haemul pajeon (seafood pancake) as well. To drink there is dongdongju, a cloudy rice wine similar to makgeolli (rice wine).
